You are going to love this Pumpkin Spice Loaf!

I have so many lovely memories of baking in the kitchen with my mom and sister when I was a little girl. Banana bread was one of my favourite things to cook together, so as I got older I started experimenting with different flavours. I find that my creativity comes out the most when the fall season rolls around, so it was only fitting that I created my own Pumpkin Spice Loaf recipe to share with my family!

Light and fluffy, flavoured with warm spices and pumpkin… YUM!

This recipe is really all about the warm spices! They truly compliment pumpkin so well and are what makes this time of year so nostalgic for most of us. You can find pumpkin pie spice at the grocery store, which is the perfect combination of all the yummy spices that make this recipe so good!

If you can’t find pumpkin pie spice at the grocery store, you can easily make it at home! It generally contains 3 parts cinnamon, 2 parts each ground ginger and nutmeg, and 1 part each allspice and cloves. However, you can adjust the quantities of each ingredient to your liking 🙂

Ingredients:

3/4 cup coconut oil

2 eggs

1 1/2 cups pumpkin puree

1 cup brown sugar, packed

2 tsp vanilla extract

1 3/4 cups flour

1 tbsp pumpkin pie spice

Pinch of salt 

1 tsp baking soda

1 tsp baking powder

Granulated sugar for topping

Method

Preheat the oven to 350 degrees.

Place the coconut oil into a glass bowl and melt in the microwave (this takes approximately 30 seconds). Once melted, allow to cool for a few minutes and then proceed to whisk in the eggs.

In a mixing bowl, add the pumpkin puree, packed brown sugar, vanilla extract and egg/coconut oil mixture. Stir until all of the ingredients are combined. 

Into a separate bowl, add the flour, pumpkin pie spice, salt, baking soda and baking powder. Stir to combine all of the ingredients.

Add the dry ingredients into the wet ingredients and stir to combine.

Pour the batter into a greased loaf pan and sprinkle with granulated sugar. Bake in the oven for 60-65 minutes, or until fully cooked through.

Recipe Notes

Be sure to use pumpkin pie puree and not pumpkin pie filling. Pumpkin pie filling contains sugars and other ingredients that significantly change the flavour and does not work with this recipe.
