Are you a fan of fruit in your salad!?

… because I totally am!!

Something about adding fruit into a salad just adds the perfect juicy bite. I love the unique flavour of fresh fruit next to a healthy, leafy green.

Honestly though, I like pretty much anything in a salad… vegetables, fruit, nuts, cheeses, protein like grilled salmon or chickpeas, or even carbs like roasted sweet potatoes or croutons! I’m down for it all! But today we are bringing on all the berries with this Mixed Berry Salad with Poppyseed Dressing!

Poppyseed Dressing

I love taking ordinary dishes, like a salad for example and transforming it into something new and DELICIOUS.

My Mixed Berry Salad with Poppyseed Dressing is no exception! It is fast, fresh and so yummy! There is barely any prep work involved so it comes together so quickly!

Enjoy it as a healthy, light side dish, or make it a meal by adding some grilled chicken or prawns! Either way, I really think you are going to like it!

Mixed Berry Salad

Mixed Berry Salad with Poppyseed Dressing


Ingredients:

5-6 cups spring mix greens

3-4 mini cucumbers, sliced

1.5 cups of blueberries, raspberries & blackberries (1/2 cup each)

5-6 strawberries, sliced

1/4 cup feta, crumbled

1/4 cup slivered almonds, toasted

1 avocado, sliced (optional)

For the Poppyseed Dressing:

1/4 cup olive oil

1 tbsp white wine vinegar

2 tbsp honey

1 tsp dijon mustard

Half a lemon, juiced

1 tsp poppyseeds

Salt to taste

Method

In a mason jar, add all of the ingredients for the poppyseed dressing. Screw on the lid and shake until all ingredients are fully combined. 

Place the greens into a large salad bowl and top with the sliced cucumbers, blueberries, raspberries, blackberries and sliced strawberries. Sprinkle on the crumbled feta and toasted almonds. 

Drizzle the Mixed Berry Salad with the poppyseed dressing before serving and enjoy!


Recipe Notes

  • Feel free to substitute the spring mix for any leafy greens that you prefer.
  • If you aren’t a fan a feta, you can substitute it for goat cheese which is also delicious in this recipe!
  • If you have more time on your hands, you can replace the toasted almonds with candied nuts of your choice. I have a yummy recipe for maple cinnamon pecans that you can view here!
