Let’s make a Chopped Kale Power Salad with Air Fryer Chicken!

I am totally obsessed with this Chopped Kale Salad with Air Fryer Chicken! I’ve had it so many times this month and am still not sick of it!

It is full of vibrant flavours and colours and will keep you feeling totally satisfied! I especially love the tangy pops and pomegranate and the best part of all is the secret ingredient… fresh mint! It adds so much flavour and really freshens it up! Trust me, if you aren’t a fan of salad made with kale, then try adding some fresh mint and I’m sure it will completely change your mind!

This recipe makes a large amount of nutrient packed salad and keeps perfectly in the fridge so it is ideal for meal prepping. I mean, you can’t go wrong with having healthy and delicious meals ready to go! Plus the air fryer chicken is to die for… DELISH!

What exactly is a “Power Salad”?

A “Power Salad” is packed with tons of nutrients and is substantial enough to eat as a full meal for lunch or dinner! They usually include an assortment of healthy vegetables, leafy greens, fruit, different forms of protein and often times some carbs to help you feel happily satisfied. 

My Chopped Kale Power Salad with Air Fryer Chicken has protein packed chickpeas, tons of veggies like shredded carrots, cucumber & red bell peppers, red onion, tangy pomegranate seeds and fresh mint all piled onto a bed a leafy kale. It is then topped with the best air fryer chicken for extra protein and flavour!

How to make Air Fryer Chicken

My life is so much easier since discovering the air fryer. It tremendously cuts down cooking time and helps recipes become low maintenance and easy so anyone can do it! 

Let’s be real, cooking can become a daunting task at times, but the air fryer is so easy and makes cooking fun! You can basically put almost anything in there and it comes out fabulous… and my Air Fryer Chicken is no exception! 

Coated in olive oil and a blend of paprika, garlic powder, onion powder and salt and then cooked in the air fryer for the perfect bite! Perfectly crispy, while still incredibly moist and ready to go in around 22 minutes… how great is that!

Recipe Notes:

  • This salad is great for meal prepping and keeps perfectly in the fridge. Store in an air tight container in the fridge and you will have an easy and delicious meal ready to go!
  • Feel free to double the chicken portion of this recipe if you want to meal prep extra protein to enjoy with the salad. Just be sure that the chicken isn’t touching in the air fryer so that it cooks evenly and quickly.

Ingredients:

2 boneless skinless chicken breasts

2 tbsp olive oil

1 tsp paprika 

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

4 stalks of kale, chopped with stalks removed

2 (398ml) cans of chickpeas, rinsed 

The seeds of one pomegranate

2 carrots, grated

1 red bell pepper, diced

1/2 cucumber, diced

1/2 red onion, finely chopped

1 bunch of fresh mint, chopped

For the Dressing:

1/4 cup olive oil

4 tsp red wine vinegar

2 tbsp pure maple syrup

1/4 lemon, juiced

Salt to taste


Method

For the air fryer chicken, drizzle the olive oil over the chicken breasts. Season each chicken breast with the spices (paprika, garlic powder, onion powder and salt) until each chicken breast is fully coated. Spray the air fryer basket with cooking spray and place the chicken into the basket. Air fry at 390 degrees for about 22 minutes or until the chicken is cooked through. If you do not have an air fryer, you can grill or bake the chicken!

For the salad dressing, add all of the ingredients (olive oil, red wine vinegar, pure maple syrup, lemon juice and salt) into a mason jar and shake until fully combined. 

For the salad, add the kale into a bowl and follow with the remaining ingredients (chickpeas, pomegranate seeds, grated carrots, diced bell pepper and cucumber, red onion and fresh mint). Toss the salad and drizzle over the dressing before serving.

Top the salad with the sliced air fryer chicken and enjoy!!
