Something about both Popsicles and Prosecco just screams summer! This crowd pleasing cocktail recipe paired with a beautiful sunny day is really all you need for the perfect summer afternoon!
It’s that time of year where entertaining and backyard barbecues are in full swing! But let’s be honest… we’ve all been in that situation where you aim to impress your guests with a fancy cocktail but end up spending all of your time in the kitchen preparing your pretty creations. It’s no fun missing out on all of the fun and now you don’t have too!
Give my Sparkling Popsicle Prosecco a try! Not only is this refreshing beverage totally unique, but the best part is… there is only two ingredients!! It is creative and enjoyable! The perfect conversation starter that never fails to impress at any gathering!
Sparkling Popsicle Prosecco
You will need:
- Sparkling Prosecco (wine works lovely as well)
- Fruity Popsicles of your choice
Method
Place the fruity popsicles into each glass right before you are ready to serve.
Top with the Sparkling Prosecco! You can choose to garnish the cocktail with berries or even edible flowers if you want to get real fancy!

The Prosecco
Part 1 of this adorable summer cocktail recipe is of course, the Prosecco!
I chose to use Sparkling Rosé Prosecco for this recipe because the pretty pink hue adds a nice hint of colour and who doesn’t immediately love to enjoy a little rosé the second that summer rolls around 😉
Prosecco has that delightful hint of effervescence and a nice mild flavour that pairs perfectly with so many ingredients, especially juicy fruits!
Not only is this recipe fabulous with Prosecco, but wine also works just as good! Rosé or white wine works best in my opinion 🙂
You can also easily turn this recipe into a delicious “mocktail” by swapping out the Prosecco with bubbly water instead! Flavoured bubbly water is particularly delicious! You can get creative and play around with the many flavours that are available at your local grocery store.
The Popsicle
Part 2 of this recipe is what makes it unique and fun… the popsicles!
The popsicle element takes this cocktail over the top and gives you your “Martha Stewart Moment” because it is truly a crowd pleaser! You end up with a fab cocktail that is creative yet so simple and easy to make!
The popsicles will keep your beverage nice and cold so it is the perfect recipe for warm, sunny days! They will start to slowly melt and flavour the Prosecco with hints of fruit!
If you want to take this cocktail to the next level, you can always make your popsicles from scratch. You can add slices of your favourite fruits or berries before you freeze your popsicles to make them extra pretty and add a little texture!
